what are “activated” nuts?

* “activated” has become an industry term to describe nuts and seeds that have been soaked and then either dehydrated or oven dried.

* all nuts and seeds (as well as grains and legumes) contain phytic acid and other anti-nutrients that block the absorption of essential minerals as well as inhibit enzymes essential to digest our foods. A diet high in phytic acid can lead to many health problems including nutritional deficiencies, digestive problems (eg bloating and gas), bone loss and tooth decay. This is particularly so for growing children. Higher amounts of phytic acid are found in foods grown with modern fertilizers than those organically grown.

* long-soaking nuts in an acidic medium (eg whey or apple cider vinegar) and then dehydrating at very low temperatures has been shown to reduce phytic acid. Our nuts are long soaked in filtered water, sea salt and either fresh whey or apple cider vinegar. The nuts are rinsed in filtered water, then dehydrated at no more than 50 degrees for several days until they are light, crispy and deliciously moorish.

Heating nuts above 50 degrees for an extended period destroys the beneficial enzymes in the nuts.
* traditional societies the world over were known to have soaked (or sprouted) then sun-dried their nuts and seeds before consuming them.
